Great Apple Cake

Great Apple Cake from Nancy Holderread

Mix 1 1/3 C vegetable oil
2 cups sugar
3 large eggs
Sift and add
3 C flour
1 Tablespoon cinnamon
1 tsp salt
1 teaspoon baking soda
Core and cut into small wedges and add 3 C Granny Smith apples, 3 to 4 large apples
1 tsp vanilla
Nuts optional
Pour batter into greased and floured 12 cup bundt pan
Bake 350 1 1/2 hours and 5 minutes
Cool

Caramel sauce frosting
1 stick butter
1 cup light brown sugar
1/4 cup evaporated milk
Pinch salt
1 tsp vanilla
Cook 5 to 7 minutes until light caramel color
Pour over cooled cake

We had some at Jim and Nancy's and Nancy gave us some for the road.

Teriyaki Chicken

Marinade
2 garlic cloves
1 inch peeled ginger cut up
1/2 cup teriyaki sauce
1/4 tsp crushed red pepper
2 Tablespoons corn starch

Chop garlic and ginger in Quick Chef Pro, Power Chef
Power Chef
 or Chop 'N Prep Chef until finely chopped. Mix with remaining ingredients. Pour over 1-1 1/2 pounds chicken parts in Season-Serve.
Refrigerate. Turn a couple times while marinating 1-4 hours. Special design of Season-Serve allows marinade to circulate and remember no more plastic bags.
Season-Serve

Preheat convection oven to 375 degrees.

2 stalks celery cut up
1 green pepper cut up
1/2 red onion cut up
4 oz. pineapple chunks with juice

Put vegetables in bottom of Ultra Pro.
Cover with chicken and marinade.
Cover and cook for 45 minutes.
Let stand for 10 minutes and carefully remove cover away from you.
Ultra Pro

Serve with rice.

Gluten Free Baking Mix and Pancakes

Gluten Free Baking Mix

4 cups rice flour
1 ¼ cups potato starch
¾ cups tapioca flour
3 teaspoons xanthan gum
2 Tablespoons baking powder
¾ teaspoons baking soda
1 ½ teaspoons cream of tartar
2 teaspoons salt
¼ cup sugar
1 cup coconut oil

Mix all dry ingredients in large Tupperware bowl. Put ¼ of dry ingredients and ¼ of coconut oil in Power Chef or Quick Chef Pro. Mix until well combined. Repeat for remaining quarters of dry ingredients and oil. Store in airtight Tupperware container.

Margaret's Pancakes

1 cup baking mix
¼ cup milled flax seed
½ cup applesauce ( 4 oz cup)
1 egg
3/4 cup milk

Mix all ingredients in Power Chef or Quick Chef Pro. Makes 12 small pancakes.

Zucchini Pancakes

1 medium zucchini cut in quarters
cut 1 quarter sweet onion in half
pinch garlic salt
1 Tablespoon ketchup
2 eggs
1/3 cup gluten-free baking mix

Chop half of vegetables in Power Chef or Quick Chef Pro. Add remaining vegetables and rest of ingredients. Chop until vegetables are finely minced. Makes about 12 small pancakes.

Parsley Pesto

This is a great recipe for the bunch of Italian Parsley that came in your farm share.

Parsley Pesto
½ cup roasted sesame tahini
1 cup firmly packed flat leaf parsley, washed and dried well
½ cup grated Parmesan cheese
1 tablespoon minced garlic (4 cloves)
1 tablespoon grated lemon rind (1 large lemon)
2 tablespoons fresh lemon juice
½ teaspoon coarse salt
¼ teaspoon fresh cracked pepper
1/3 cup olive oil
Wash and dry parsley leaves in spinner basket of Tupperware Quick Chef Pro.

Chop garlic in Quick Chef Pro with metal blade.
Coarsely chop parsley leaves and put into Quick Chef Pro with metal blade. Add tahini, Parmesan cheese and lemon rind. Chop finely.

Add lemon juice, salt and pepper. Chop, while adding oil in a thin stream, until smooth.

Store in Quick Chef Pro bowl with lid.

Serve on pasta, rice or vegetables. If sauce is too thick, add some water from cooking pasta or vegetables.

Best No Bake Bar Cookies

This is a good recipe for getting rid of marshmallows that have gotten sticky in the heat

1/2 to 2/3 bag of marshmallows
1/4 cup butter
1/2 cup roasted sesame tahini
1 1/2 cups oatmeal
1/2 cup seeds such as sunflower, pumpkin, sesame or pine nuts

Melt the first 3 ingredients together. Remove from heat and stir in the last 2. Press into buttered pan. Refrigerate until cold. Cut into bars.
These are chewy, flavorful and not too sweet.
Store in airtight Tupperware container in the refrigerator.
